Spicy Fried Chicken(ayam Goreng rempah)

1 chicken
2 shallots, chopped

2 tbsp fresh ginger,peeled and chopped
3 cloves garlic,chopped

3 dried red chillies,soaked in hot water and drained

3 tbsp sweet soy sauce

1 tbsp sugar
1 tbsp ground cumin
1 tbsp ground coriander
1/2 tbsp ground turmeric salt and freshly ground black pepper canola oil for deep frying
1 lemon, cut into wedges

Cut the chicken in 10-12 pieces. In a food processor o mortar, combine the shallots,ginger,garlic and chillies, and grind to a paste.
Add 1-2 tbsp water if needed to facilitate the grinding.

Add the soy sauve, sugar and ground spices and mix well.

Marinate the chicken pieces well with the paste,nassaging the chicken well so pieces are well coated wih paste.
Refrigerate for at least 4 hours or overnight.

preheat the oven to 180 c.
Pour the oil into frying pan and heat it to 180 c.
As it heats up, pat the pieces of chicken dry with paper towels.

When the oil is hot, gently drop the pieces in the hot oil.

Don't crowd the pan;fry them in batches.

Deep-fry until crispy on one side (3-5 mins) and then turn the chicken and deep fry the other side.

When done,drain on paper towels and transfer the chicken to the oven.

Bake for 15-20 mins

Garnish with lemon wedges.
